REPLACEMENTS

  • Milk. Drink fortified soymilk, rice milk or almond milk in place of cow's milk.
  • Butter. When sautéing, use olive oil, water, vegetable broth, wine or fat-free cooking spray instead of butter. In baked goods, use canola oil.
  • Cheese. Use soy cheese or nutritional yeast flakes, which are available in health food stores.
  • Eggs. In baked goods, try commercial egg replacers — a dry product made mostly of potato starch. Or you can use the following to replace one egg: 1/4 cup whipped tofu or 1 tablespoon milled flaxseed mixed with 3 tablespoons of water. For an egg-free omelet use tofu instead of eggs.

NUTRIENTS: 

  • Protein. Your body needs protein to maintain healthy skin, bones, muscles and organs. Vegetarians who eat eggs or dairy products have convenient sources of protein. Other sources of protein include soy products, meat substitutes, legumes, lentils, nuts, seeds and whole grains.
  • Calcium. This mineral helps build and maintain strong teeth and bones. Low-fat dairy foods and dark green vegetables, such as spinach, turnip and collard greens, kale, and broccoli, are good sources of calcium. Tofu enriched with calcium and fortified soy milk and fruit juices are other options.
  • Vitamin B-12. Your body needs vitamin B-12 to produce red blood cells and prevent anemia. This vitamin is found almost exclusively in animal products, including milk, eggs and cheese. Vegans can get vitamin B-12 from some enriched cereals, fortified soy products or by taking a supplement that contains this vitamin.
  • Iron. Like vitamin B-12, iron is a crucial component of red blood cells. Dried beans and peas, lentils, enriched cereals, whole-grain products, dark leafy green vegetables, and dried fruit are good sources of iron. To help your body absorb nonanimal sources of iron, eat foods rich in vitamin C — such as strawberries, citrus fruits, tomatoes, cabbage and broccoli — at the same time you consume iron-containing foods.
  • Zinc. This mineral is an essential component of many enzymes and plays a role in cell division and in the formation of proteins. Good sources of zinc include whole grains, soy products, nuts and wheat germ.

The actress is getting on her bike – stationary bike, that is – for a spinning class at Montana Avenue's Revolution Fitness in Santa Monica. The actress was spotted taking a class from teacher Bobby Neely on Sunday, sporting a white T-shirt, black leggings and, of course, her baby bump. Kidman sat on a bike next to her personal trainer and rode to a soundtrack including songs by Mary J. Blige, Bon Jovi and everybody's favorite '80s icons, Culture Club. I can't help the fact that I absolutely love Kate Hudson. I love how she's beautiful but not full of herself. She never goes over top but always looks stunning. She's also an amazing actress with a great sense of humor. Kate has it all, including an amazing bikini body. I couldn't help myself from posting about her again because I find her to have such a motivating body image.

According to the behollywoodfit activity records so many of you are interested in pop singer Rihanna's diet and fitness secrets. For those of you eager to learn how Rihanna keeps fit, today is your lucky day. Rihanna tells all in an interview with Fabulous Magazine.

YOU have an amazing figure. How do you stay in shape?
A lot of hard work and a lot of running on the treadmill. Cardio is the key. I have a personal trainer who travels with me if we have a big event coming up. I work out every day but I need a trainer to motivate me – I don’t find it much fun working out on my own.

What do you like about your body?
My bum, and I keep working at it as I want it to be perfect. It makes my clothes look good – and guys like it!

And what do you like least?
My legs. I’m insecure about them. Everyone wants to have slim, perfectly-toned legs and I’m the same. I do weights but I don’t want my legs to bulk up so I do a lot of cardio. I’ve lost a lot of weight since I started working out and if I exercise every day for a week, I can drop several pounds. If I diet, I see even faster results.

Do you have a strict diet?
Carbs are the enemy but if I go three days without them, I start getting weak. If my trainer had her way, I’d eat small meals every three hours, but I sometimes only eat once or twice a day. I have egg whites and pineapple for breakfast with hot water and lemon. For lunch I have fish and potatoes. I hate vegetables but I make myself eat them. For dinner I have fish again.

Does size matter?
Not at all. My size varies – sometimes I’m a (US) 2, sometimes 4 (UK 6 or 8) – but what matters is being fit and healthy. Being slim makes me feel better about myself. It boosts my self-esteem, and having a toned body helps with my job because I wear a lot of skimpy costumes. My weight fluctuates, but I don’t weigh myself every day. I’m 5ft 8in and weigh around 9st 7lb.
